Every civ will have two unique technologies, including all of the old ones. They've not been officially revealed in any kind of comprehensive list yet, but there are a few interesting ones we've seen while they're streaming:
British - Warwolf
- Trebuchets have an area-of-effect
Mongols - Nomad
- If your houses are destroyed, you don't lose that population space
Teutons - Ironclad
- I can't quite remember... I think something about stronger siege units or buildings.
Vikings - Chieftains
- Berserks gain an attack bonus against cavalry
To name a few. As for the new units, there will be many in the scenario editor, but I think that the only one which more than one civ can access is the Eagle Scout, which replaces the Eagle Warrior in Feudal Age, and the Condotierri, which is the Italian team bonus - a civ with an Italian ally can make Condotierri from their barracks. Anyone who knows more than I, please correct/add to this.
