Mine 3 favourite:
1st Huns
Fast, versatile and dynamic civ to play with. The variety of styles and strategies shown in Huns wars explain why it's the most popular setting on Voobly, and my favourite matchup as well.
2nd Mongols
At the start, they are even faster than Huns. The hunting bonus and extra line of sight for scout allow players to make the Dark and Feudal Age(which is hit sometimes below 9 min mark) more challenging and exciting. Also, the strongest Mongol unit, the Elite Mangudai, requires a very solid eco with 90+(maybe more?) vills most of the time. Therefore, the Castle Age play is very dynamic as well, especially because Mongols have both Bloodlines and Thumb Ring to make Knights and Crossbowmen stronger
3rd Chinese
First of all, if you think they're a terrible civ, let me tell you: they are not. If the start is pulled off properly, Chinese player could be a bit more than 1 vill ahead(after other civ researches loom). Also, their standard play is feudal agression, not Drush FC. Is not that beautiful? Later on, the cheaper technologies allow them to mix up units before most civs would do. And in Imperial Age, they have a lot of counters for their own units.
