There are a lot of things in this game you could change to reduce the need to micromanage, but that takes a lot of the skill out of the game

But, it just doesn't make sense to queue fishing traps since they are rarely used. As dfs said, a farm is by far more useful than a fish trap because a farm will collect food much faster.
If the example you are thinking of is some BF game with a small pond and you having like 20-30 fishing ships in it, this is not really productive; it's just something you see <1600 do.
So simply, you only make fish traps once in dark/feudal and because they last so long, by the time you have a chance to rebuild them, farms are a better option.

2. To much work at 60+ pop? That is one of the aspects of the game. Just learn to multitask. The need to manage will not be limited to fish traps. Experience has to tell you when to look where + the help of some useful hotkeys (ctrl-D for Dock).
UP doesn't intend to touch any game balance, and adding fish trap queue would be out of UP's area. Food type conversion bug was fixed only because it was a bug - there was an error in the code that broke it outside deer <-> boar and shore fish <-> deep sea fish. Fish trap queue would be a new feature instead of a bug fix.It is a point too that fish traps are slow as many have said, but still I think it would be good for the game to keep improving in the aspect of making things easier to the player (as it's been done with the multiple food sources problem which was solved in UP).

Never seen bender going for full feudal sling with vikings? He makes 2 docks and produces about 20+ fish ships.
