Eggs benedict on avocado toast.
Wife and I make an avocado toast/eggs benedict w/ fruit breakfast. Great for a mid morning breakfast after a night out, pushes back need for lunch quite a bit to the point sometimes we skip it entirely.
Best done w/ 2 people but entirely doable on your own. Most of the steps below are occurring simultaneously.
Bell Pepper
Grape tomatoes
Mushrooms
Four Eggs
half a ripe avocado
1/5th of a lemon, lemon juice
Salt and Pepper
white distilled vinegar
Six pieces of Bacon
Either sautee bacon to use greasee for veggies or bake in oven. (or use a microwave, heathens!)
Sautee cut up peppers, grape tomatoes, mushrooms to your preference. (Typically we cover to keep that sweet, sweet moisure in and prevent burn while working the other bigs)
Boil large saucepan of water, reduce until gentle simmer, add some salt and a small amount of white vinegar
Make two pieces of toast. In a bowl, mix together salt and pepper, cut up avocado with lemon juice until you have a paste (mash with spoon/stirl) Spread paste onto toast.
Swirl water just before putting egg in (using an egg strainer helps) set a timer for 3 minutes. 1:30 swirl water, add in add next egg. at 3 min reset timer for 1:30/add next egg, remove done egg w/ slotted spoon. Place done egg on avocado pasted toast.
Serve with orange juice, coffee.
I prefer my bacon broken up and placed on top of the egg/avocado mixture and eaten with the veggies.

(we suggest one banana, 8 strawberries [cut up into bit pieces], and blueberries)
